Macaroni and Cheese - Homemade and Gluten Free

I must be in a cooking mood lately as it seems to be all that I've posted. This was quote, "the best macaroni I've ever had in my life" from Mr. - so here's to that!

Gluten Free 3 Cheese Macaroni - with Broccoli and Leaks. 

What you need:
- package of brown rice pasta - 16 oz is plenty - I used penne pasta not macaroni (just preference)
- goat cheese 1/3 cup
- 1/2 cup of regular cheddar cheese- strong/old
- 1/2 cup of another one of your favourite cheeses- we used a white cheddar that was aged 3 years.
- 2 tbsps coconut oil
- a head of broccoli
- one full leak
- vegetable broth - 1/3 cup
- milk/almond milk - 1/3 cup
- buckwheat flour - 1/3 cup
- hemp hearts/bread crumbs if you prefer
- salt and pepper to taste

First fill a large pot with water and add salt - bring to a boil and cook your brown rice pasta until al dente. In the meantime, cut up your broccoli - I prefer larger pieces, and cut up your leaks. Put 1 tbsp coconut oil in pan and saute your veggies with salt and pepper for about 3 mins - max. 5 mins - doesn't have to be long.   Add in your second tbsp of coconut oil, add vegetable broth, milk - also add in about 1/3 cup of the water from the brown rice pasta cooking*. This will add to the thickness of the sauce (* my sister taught me this one). Add in your buckwheat flour and stir well to mix it in - you can bring heat up high to encourage sauce to thicken. Now turn the heat off and add in your cheeses while mixing very well. When you feel that your sauce is thick enough add in your pasta and stir well so every piece of pasta is coated. This does not have to be REALLY thick sauce as it is very rich. Mine was just thick enough to coat the pasta. Now pour your pasta into a casserole dish. Add more freshly grated cheese on top. Sprinkle hemp seeds or bread crumbs (can get these gluten free). I used hemp hearts because I heart them and it added a crunch.
Turn oven to 350 degrees and bake for about 15 - 20 mins - until cheese is melted and a little crispy on top.

Take out of the oven and enjoy warm!! This is still yummy DAY 2 for leftovers and makes plenty - use a big casserole dish!
