Oatmeal, Chocolate Chip, Coconut, Peanut Butter Cookie (Gluten Free)

I have to admit this is probably not the best thing to make when you feel under the weather...but lets be honest...chocolate has antioxidants which is good for colds...right? For any #thinkfitness readers I did try my best to make these somewhat healthy. Coconut (fruit), dark chocolate (antioxidants), peanut butter (protein), eggs (protein), millet flour (gluten free), oats (fibre)... see!

Here's my recipe for a good old fashion "healthy" Oatmeal Choco chip, Cocnut, Peanut Butter Cookie:

love using a silicone baking sheet! easy to clean and less mess...

2 cups of oats
1 cup of millet flour
1 tsp of baking soda
1/2 tsp salt
2 eggs
1 tsp of vanilla extract
1 tbsp of agave nectar
1/4-1/3 cup of coconut sugar - depends how sweet you like it
1/4 cup of peanut butter - can use more depending on how peanut butter you would like them
1/2 cup of coconut flakes (or shredded coconut) I prefer the larger chunks
1/2 cup of dark choco chips

Then bake at 350 degrees for 12 mins. Leave on the rack for another 5 mins to cook on the pan and then take them off to cool for another 5 mins or so on a cooling rack. 

Enjoy warm and you won't be disappointed... my bite was a tad gooey and the choco was still melted...perfect bite!

Tip ** if you are celiac...make sure your oats are gluten free (so there is no cross contamination)!
